A Champagne Mule
1.5 oz Ginger Honey Syrup (see recipe below)
1 oz Vodka
1/2 oz Fresh Lime Juice
Top with Champagne or Prosecco
Garnish with Lime, Mint and Candied Ginger
How to make Honey Ginger Syrup.
You will need a pot, honey and fresh ginger root and water. Find your favorite honey, it is best to use a local or fresh honey. Take 1.5 cups of water and 2 heaping spoonfuls of honey and start them on a low boil. While it boils take about 1.5-2 tablespoons of ginger, peal and slice (about 1/4 in). Toss that into the boiling honey water and cook for 10-15 minutes. Because of the honey, it won't get to the syrup consistency you may think. You will know it is done when you can smell the ginger!
